So now im obsessed with Greek food...again

and these recipes look amazing, am planning on making this soup/salad soon!!!


SIMPLE LETTUCE SALAD

1 small lettuce
2-3 spring onions
fresh parsley
dill (optional)
olive oil - extra virgin
lemon juice from 1/2 lemon
salt and pepper

For the salad dressing:
Whisk the lemon juice, olive oil, salt and pepper together in a cup or small bowl until it becomes opaque - you may have to add a little more of oil or lemon juice to get this result. Generally you need at least double oil to lemon, but this differs depending on type of oil used.


GREEK LENTIL SOUP! FAKES SOUPA

found a couple recipes and am thinking of taking bits and pieces and making a kickass soup!!

1 Pound Lentils
1 Medium Onion Minced
2 Stalks Celery
2 Carrots
2 Tablespoons Tomato Paste
½ Cup Olive Oil
2 Cloves Garlic Minced
2 Bay Leaves (Remove after soup cooked)
8 Cups of Water (Add More if Thickens Too Much)

--or--

½ kg brown lentils
1 medium onion grated
5 cloves garlic roughly chopped
60 ml olive oil
2 bay leaves
Pinch of oregano
Salt & pepper to taste

--or--

280g green lentils
400g tin of tomatoes
4-5 cloves garlic
1 onion, finely chopped
2 sticks celery, thinly sliced
2 medium carrots, finely chopped
150 ml olive oil
1 tablespoon tomato paste
1 tablespoon dried oregano
1 bay leaf
salt and pepper
1 1/2 litre water

Lolz that sounds nom nom! Btw what are spring onions? Speaking of onions, I finally used that itty bitty one I pulled out of the garden and it was quite delicious! Potent and sweeter, but delicious!
